So you’re wondering how to make pour over coffee? Designed to extract maximum flavor, the pour over method has become increasingly popular. We paired a V60 coffee dripper with HOPE Coffee Mexican Light Roast and what followed was an incredibly smooth and bright cup of coffee.

What you’ll need:

-Filter compatible with your preferred dripper-A V60 dripper (or your pour over dripper of choice)

Mexican Light Roast (Whole bean)

-Grinder

-Kettle

-Food scale

Your favorite HOPE Coffee mug!

Setting Up:

-Set V60 dripper over your mug.

-Place filter in V60 dripper.

-Pour hot water in the filter and allow it to drip through. (This will not only rinse your filter of any paper residue but also gets your dripper and mug warmed and ready to brew.)

Grind:

-Grind 20 grams (about 1 ½ Tablespoons) of our Mexican Light Roast beans on a medium setting. Coffee grounds should feel like coarse sand.

-Pour grounds into filter evenly and then create a small crater in the middle.

Pour:

-Tare scale and start timer.

-Pour 35g (⅛ cup) of 200 degree water (steaming but not yet boiling) over grounds to allow it to pre-infuse.

-After 30 seconds, pour water until scale reaches 100g (½ cup) in a circular motion.

-At 1 minute, slowly pour water until scale reaches 200g (an additional ½ cup).

-At 2 minutes, pour water until scale reaches 300g (an additional ½ cup).

Let the remaining water drip through and enjoy a fresh, flavorful cup of HOPE Coffee!

Tips:

Use filtered water. When brewing, always pour hot water directly on the coffee grounds rather than on the filter wall. Adjust measurements to taste.

The cold brew method is one of the most popular ways to drink refreshing cold coffee during those warm times of the year. The Toddy cold brew system provides an excellent way to craft a delicious cup of cold brew coffee. With the cold brew brewing method, you will be able to savor the flavors of your coffee beans in a chilled coffee drink.

For cold brew coffee, we highly recommend coffee roasts that are on the light-medium roast level spectrum.  We highly recommend our our Honduran Medium coffee roast. Using the Toddy system will allow you to taste the distinct tasting notes from this region of the world, where HOPE Coffee is engaged in sourcing high-quality coffee and partnering with local churches to share the gospel through servant-evangelism projects.

One of the most popular modern methods for cold brew is the Toddy cold brew system, which soaks coffee in water for a number of hours before allowing the coffee to drip into a small container. This creates a cold brew coffee concentrate, which can then be mixed with water, milk, ice, and more to create different variations of cold brew drinks.

Cold Brew Coffee Toddy

Preparing to Brew

Before you make cold brew coffee with a Toddy, you will need the following items:

If you use the proportions listed in this cold brew brewing guide, you can purchase a 12oz bag of coffee and avoid the need for measuring out coffee on a digital scale. While freshly ground coffee will provide the best coffee taste, you can also use pre-ground coffee in order to eliminate the need for a coffee grinder.

The Grind Level
When preparing to make a cold brew with a toddy, we recommend grinding your coffee to a standard grind level or coarse grind level. This will allow the proper level of extraction from the coffee grounds, which will bring out the flavor and tasting notes of the coffee beans.

The Process
To begin making cold brew coffee with a Toddy coffee brewing system, start by inserting the small stopper into the bottom of the brewing system. Take the small inside filter out, wet it, and place it back into the bottom of the brewing system. Ensure that the filter is level in the brewing system, so that the coffee will extract correctly and precisely during the dripping part of the process.

Next, add one cup of water into the bottom of the brewing system. Pour six ounces of coffee grounds into the water, then slowly pour three more cups of water over the grounds in a circular motion.

Wait five minutes and allow the coffee to soak in the water. Then, add six more ounces of coffee grounds.

Wait five more minutes, then add the last three cups of water. Throughout this whole process, make sure that you do not stir the coffee grounds and water at all. Ensure that the coffee grounds are wet on top.

Allow the coffee and water mixture to brew at room temperature for 12-24 hours.

When the cold brew mixture has finished brewing, place the glass decanter underneath the brewing system. Remove the stopper carefully, allowing the coffee to drip slowing into the glass decanter.

Once the coffee has finished dripping into the glass decanter, your cold brew concentrate is ready for your enjoyment! This concentrate should stay fresh for up to two weeks in your fridge.

To prepare a cup of cold brew coffee, simply fill a cup halfway with the concentrate. Then, fill the cup to 3/4 full with water, then fill the rest of the cup with ice. If you’d prefer, you can add milk and sugar to sweeten the coffee drink.

Enjoy your ice-cold cup of cold brew coffee!

Cold Brew Coffee
Simple Method

What is Cold Brew Coffee?

Cold brew coffee is NOT the same as iced coffee, which is hot coffee that has been chilled and poured over ice.  The process of cold-brewing your coffee results in a less acidic version of your favorite roasts!  While any type of coffee can be brewed using this method, lighter – medium roast coffees tend to work the best.  We highly recommend our Honduran Medium Roast Coffee for a full, rich flavor, or our Mexican Light Roast Coffee for a light, easy-to-sip beverage. You will find that this cold brew method brings out different flavors and notes than when brewed in the traditional hot method.  Give it a try!

For best results, use medium – coarsely ground coffee.  Don’t worry!  Our pre-ground coffee options will work well!

Cold brew can be made in any size batch.  Simply use the ratio of 4:1 (4 cups water to 1 cup ground coffee).  Use the chart below as a handy reference for HOPE Coffee’s packaging.

What You Will Need

Glass Jar that can hold the amount of liquid plus grounds appropriate for the amount of concentrate you wish to brew.

Coffee filter and/or fine mesh sieve.

Second glass jar or pitcher for filtering concentrate.

High-quality Medium – Light Roast Coffee, ground medium to coarse. We recommend our Honduran Medium or Mexican Light Roasts!

How to Make Your Cold Brew Coffee Concentrate

Pour desired amount of coffee into jar.

Slowly pour appropriate amount of water over grounds. Secure lid and stir or shake gently. Leave on counter or in refrigerator for at least 12 hours, but for no more than 24 hours.

Pour coffee through coffee filter or fine mesh sieve into another glass jar, discarding grounds.

Pour equal parts coffee concentrate and water over a glass of ice.  Add a splash of milk or your favorite liquid creamer, if desired.

Fun Tip: For those who like to drink this slowly, try freezing some of the coffee concentrate in ice cube trays so that you can sip all day without your cold brew becoming diluted.

Store remaining concentrate in refrigerator for up to one week and enjoy your cold brew coffee every day!

The portable and compact AeroPress is the perfect choice for brewing a smooth cup of coffee at home or on the road. The lightweight AeroPress is about the size of a soda can, and is ideal when you don’t have a scale to measure your beans or when you’re traveling and still want a quality cup of coffee on the road.

The AeroPress uses a total immersion brewing technique which allows for all of the coffee grounds to be extracted, delivering a delicious full flavor. Typical drip coffee techniques will slowly drip water on a bed of coffee grounds, and the coffee will usually be over-extracted from the center. With the AeroPress coffee method, you are drinking a smooth, full-bodied cup of coffee.

The recommended grind for the AeroPress is fine, like the texture of table salt. Since the AeroPress uses micro-filtration, unlike other press techniques, you are guaranteed a grit-free cup of coffee. The acid level in AeroPress coffee is considerably less than other brew methods, due to the shorter brew time. The overall brew time with the AeroPress is around 1 minute and 15 seconds.

Background
The AeroPress was invented by Alan Adler from the company Aerobie in 2005. Aerobie is also famous for inventing a “flying disc” that defeated the frisbee by breaking the Guiness World Records by flying 1,333 feet into the air! The AeroPress device itself is designed similar to a syringe, with two airtight tubes in which coffee is pushed through a paper or metal filter into a coffee cup, which creates a smooth, full-bodied cup of coffee with a higher concentration that partially resembles the concentration of an espresso.

Preparing to Brew
Before you begin the brewing process for the AeroPress, you will need these items:

  • AeroPress Brewing Method 1Quality coffee (always important)
  • 1 AeroPress Scoop (17 grams or 2 ½ TB of coffee)
  • AeroPress Brewer
  • AeroPress Filter
  • Stirring utensil
  • Grinder
  • Kettle
  • Timer

The Grind Level
To make AeroPress coffee, you can start by grinding approximately 17 grams of coffee with a coffee grinder, preferably with a fine grind setting. You can adjust the amount of coffee slightly based on your taste preferences and the roast level. Just remember, every gram counts!

AeroPress Brewing Guide: Grind Level
After grinding the coffee, it should resemble table salt. For reference, the AeroPress scoop is equal to 17 grams of coffee. For the AeroPress coffee, we highly recommend either our Mexican Light roast or our Honduran Medium roast as two delicious options to use with the AeroPress.

The Process
You can start by heating a kettle of water to the boiling point. For our illustrative purposes, we utilized a JetBoil to demonstrate how you can heat water and make AeroPress coffee even when you’re on the road, camping, etc. While the Jetboil or kettle is heating, prepare the next few steps of the AeroPress below. Once the kettle of water starts boiling, let it cool for 30 seconds. At this point, it will reach roughly 205 degrees, which is the temperature we want to use for the AeroPress brewing method.

AeroPress Brewing Guide: Heating Water
To prepare the AeroPress itself, place the filter in the basket and pre-heat the filter by pouring hot water over it. This helps prepare the filter for brewing and eliminates any unwanted paper particles or paper flavor from the brew.

AeroPress Brewing Guide: Filter
Next, affix the basket to the bottom of the brew chamber and place the AeroPress on top of your mug. Then, add coffee grounds to the AeroPress. If it helps, use the coffee loader that comes with the AeroPress to funnel the grounds into the AeroPress.

AeroPress Brewing Guide: Coffee Pour
As you get ready to pour your hot water into the AeroPress chamber, have your timer ready to go. Start the timer as soon as you start pouring your hot water into the AeroPress. Make sure to soak all of the grounds within 10 seconds. You may need to tilt the AeroPress to get all of the grounds wet. Pour water to right above the No. 4 mark on the AeroPress. After all of the grounds are wet, stir the grounds and water mixture with your paddle or spoon.

AeroPress Brewing Guide - Water Pour
Next, place the plunger on the brew chamber. Pull up slightly to create pressure, but do not push down on the plunge yet.

AeroPress Brewing Guide - Slight Push
When your timer reaches 1:15, lift the plunger off and stir the mixture again. Replace the plunger and slowly press down until you hear a hissing sound.

 AeroPress Brewing Guide - Push
You can now enjoy your freshly brewed coffee! This AeroPress brewing method will yield around 7-8 ounces of smooth, delicious brewed coffee.

The Cleanup
Cleaning the AeroPress is easy! Just pop off the basket containing the grounds and filter and throw away the coffee puck. Simply rinse the basket, the plunge, and the inside of the chamber with hot water to get rid of the excess oil from the coffee beans.

How To Make Iced Coffee 1

HOPE Coffee for Cafes and Coffee Shops
Does the thought of a tumbler of cold, iced coffee sound inviting?  Our team recommends this simple recipe to make the perfect cup of iced HOPE Coffee:

  1. Use the same amount of coffee you would normally use. If you are using HOPE Coffee Honduran Medium with a 10-12 cup coffee brewer and would like to brew a full pot, we recommend brewing with about 2.0 oz (8-10 tablespoons) of coffee.
  2. Brew with 1/2 the normal amount of water.
  3. Let the coffee chill in the fridge for several hours.
  4. Add ice to your cup, mug, or tumbler. Fill it with coffee and enjoy your refreshing glass of iced coffee.

Because the ice will melt, you should brew the coffee at nearly double strength.

If you have an airpot or commercial system that allows for a half-brew, you can use that setting and make a batch of iced coffee for your church or employees:

  1. Use the same amount of coffee you would normally use. If you are using HOPE Coffee with a 10-12 cup coffee brewer at home and would like to brew a full pot, we recommend brewing with about 2.0 oz (8-10 tablespoons) of coffee.
  2. Brew with 1/2 the normal amount of water.
  3. Place the desired amount of ice directly into the brewer carafe.
  4. Brew the coffee directly into the ice.
  5. Swirl the coffee and enjoy!

One of the most popular ways to brew coffee at home is the French Press brewing method. When you make French Press coffee, you will be able to enjoy coffee that can be described as rich, thick, robust, and heavy. As the coffee grounds soak in the water, there is a high level of extraction that takes place, so that your French Press will pull many of the coffee flavors and oils from the grounds.

With the French Press coffee brewing method, the coarser grind level and thorough soaking of the coffee grounds will help provide a rich coffee drink that will satisfy the robust coffee drinkers and coffee connoisseurs alike. The following process will guide you in brewing two 12oz cups of coffee.

Background
The French Press is a coffee brewing device that was created to brew robust coffee. It was originally patented by Italian designer Attilio Calimani in 1929. It is said that the device was originally created in France with a metal or cheesecloth screen fitted to a rod that users would press into a pot of boiling water. The modern version of the French Press consists of a glass or plastic beaker, with a lid that has a plunger and mesh filter which fit tightly into the beaker. The operation of the French Press is fairly straightforward, which is why many people regularly brew coffee in a French Press at home.

Preparing to Brew
Before you begin the process of brewing the French Press, you will need the following items:

Chemex Brewing Method - Quality coffee1. Quality coffee (always important)
2. French Press coffee maker
3. Stirring utensil
4. Digital scale
5. Grinder
6. Kettle
7. Timer

The Grind Level
To start, grind your coffee beans with a coffee grinder, preferably with a coarse grind setting that will resemble bread crumbs. This setting will allow a great amount of flavor and oils to be extracted from the coffee beans during the brewing process. For our Honduran Medium Roastwhich would taste excellent in a French Press, we would recommend starting with 52 grams of coffee. Adjusting the amount of coffee beans (even by a gram) will make an impact on the taste of your cup of coffee.

French Press Brewing Guide - Grind Level
The Process
Set your timer to 4 minutes, using the countdown function.

French Press Brewing Guide - TimerPour the ground coffee into the bottom of the clean French Press. Place the French Press on top of your scale, then tare your scale (reset the scale so that the French Press is sitting on top, with the scale displaying “zero”).

French Press Brewing Guide - Scale

Fill the kettle with water and heat it until it reaches the boiling point. Let the water cool for 30 seconds, which will allow the water temperature to lower to approximately 205 degrees, then proceed to pour the water over the coffee ground. Add 100 grams of water to the coffee grounds. Try to get all of the grounds wet. This will allow the coffee grounds to bloom. Let the coffee grounds soak in the water for 30 seconds.

French Press Brewing Guide - First Pour
Next, pour water into the French Press in a slow, circular pouring motion until the water level reaches 800 grams total. Gently stir the liquid for a few moments in order to mix the coffee grounds with the water. Next, place the lid on the French Press to preserve the heat of the water, but don’t push down yet on the coffee press.

French Press Brewing Guide - Coffee Press
Let the French Press sit until the timer reaches 4 minutes, then push down on the coffee press. You can now pour and enjoy your French Press coffee. Make sure to pour immediately, in order to void the over-extraction of the coffee grounds still in the bottom of the French Press.

One of the most popular pour over methods is the Chemex method, because it extracts more flavors from the coffee, especially the bright and fruity notes. The Chemex is a beautiful glass decanter with a thick paper pour over filter inserted into the top.

With a Chemex pour over, the coarser grind level and the slower brewing time will help provide a clean, high-quality cup of pour over coffee with a subtle, sweet taste.

Background
The Chemex was invented by Peter Schlumbohm in 1941. Its hourglass design with a heat-proof wood handle, leather cord, and tapered glass is aesthetically beautiful, bringing the class to the Chemex brewing process. The Chemex has its own unique filters made from bonded paper, which removes most of the coffee oils during the brewing process to create a cleaner taste. With a Chemex, there is more room for error than in a standard drip brewing process, which allows many coffee enthusiasts around the world with varying levels of expertise the opportunity to brew this delightful drink in the comfort of their own homes.

Preparing to Brew
Before you begin the process of brewing a Chemex, you will need the following items:

Chemex Brewing Method - Quality coffee1. Quality coffee (always important)
2. Chemex coffee maker
3. Chemex coffee filters
4. Digital scale
5. Grinder
6. Kettle
7. Timer

The Grind Level
To start, grind your coffee beans with a coffee grinder, preferably with a medium or medium-coarse grind setting. This setting will allow more flavor to be extracted from the coffee beans during the brewing process. For our Mexican Light roast or Guatemalan Light Roast, which would both taste excellent in a Chemex, we would recommend starting with 25 grams of coffee. For our Honduran Medium Roast or our Guatemalan Medium Roast we would recommend starting with 22 grams of coffee. Adjusting the amount of coffee beans (even by a gram) will make an impact on the taste of your cup of coffee.

Chemex Brewing Method - Coarse Grind
The Process
The first step is to place the filter into the Chemex. Due to the folded design of the Chemex filter, divide the filter so that there are three layers facing the spout and one layer facing the back. Then, rinse the filter with hot water in order to eliminate the “paper taste” and to warm up the Chemex. Once the filter has been rinsed, pour the water out.

Chemex Brewing Method - Rinse Filter
Next, add the coffee grounds and even out the surface of the grounds. Place the Chemex on a scale and zero out the scale. Start the brewing process by slowly pouring 50 grams of water onto the surface of the coffee grounds, getting all of them wet. This process is called blooming, which will occur when the coffee starts to “puff up.” Once you have reached 50 grams and have wet all of the grounds, then wait about 30 seconds while the grounds deflate.

Chemex Brewing Method - Bloom Grinds
For the next step, pour out more water until you reach 200 grams, using a pulse pour. A pulse pour is a slow pour that is done in a small circular motion (think quarter size diameter). Slowly pour some water onto the grounds (causing them to bloom), pause while the grounds deflate again, then resume pouring. Repeat until you reach 200 grams.

Chemex Brewing Method - Pulse Pour
Then, pour out the water at a moderately slow pace until you reach 300 grams. While doing this pour, try to get all of the coffee grounds wet, but still pour slower in order to keep the level of the grounds from getting too high.

Chemex Brewing Method - ScaleFor the last pour, pulse pour until you reach 400 grams. Allow the water level to reach the surface of the grounds, so that the grounds stick through the surface, then throw the filter and grounds away.

Chemex Brewing Method - FinishedGive the Chemex a few swirls to allow the coffee to breathe, releasing more flavors, then serve and enjoy.
